This recipe is actually inspired by a recipe that was on one of the meal plans of a previous EmFit Challenge.
I have been making something similar for awhile now, because I am too lazy to look the original recipe up and I enjoy cooking "on the fly". However, I think I have tweaked and revamped it enough that it is worth sharing my version.
This is another customizable recipe. Feel free to leave the egg out, add some sprouted brown rice on the side, or swap proteins (shrimp would be tasty). Can't find broccoli slaw? Sliced cabbage will work just fine (I have made a similar recipe with cabbage). Parsley is my favorite herb and I had it on hand, but some cilantro or whatever you like would probably be good too!
Broccoli Slaw Stir Fry
Prep Time: 15 minutes + time to make eggs if using (or make ahead)
Cook Time: 20 minutes
In a large pot or pan, heat ghee on high heat. Add chicken (and a couple pinches of salt) and cook until chicken looks done. Add ground beef, onion, and garlic; cook until ground beef looks done. Add mushrooms and cook until mushrooms start to soften. Add broccoli slaw and coconut aminos and cook until broccoli slaw softens. Remove from heat and mix in parsley.
Serve with a halved soft boiled egg.
Need more carbohydrate? Add a side of white or sprouted brown rice.
