This is a twist on the salad and rice bowls from Chipotle that we all love.

Cook time: 10 minutes
Heat a cast iron skillet on high. Add the ground beef, salt, and thyme. Cook thoroughly.
In a medium bowl, combine and mix the onion, tomatoes, and pickles.
In another small bowl, blend or whisk all the dressing ingredients.
Place the lettuce on a bowl or plate. Top with the ground beef mixture and the relish mixture. Drizzle with dressing.
If you need more carbohydrates in your diet, add a side of white rice or soaked/sprouted and cooked brown rice (I get the already sprouted brown rice from Thrive Market)
